The chocolate chip cookies you didn't know you needed.

9) Supersized, Super-Soft Chocolate Chip Cookies

You’ve never had a chocolate chip cookie like this. For one thing, each cookie is massive (hence the name) and ultra-soft because the dough uses the tangzhong method, which is typically reserved for pillowy milk bread. Browned butter, extra salt and vanilla, plus a lot of chocolate (and a long chill time) make this one of the most flavorful chocolate chip cookies there is. Watch as Kye walks you through each essential step.

5) Small-Batch Cheesy Focaccia

It’s always a good time for focaccia, but sometimes you don’t have enough people to eat a whole batch. And because this bread is best enjoyed the day it’s made, you don’t want to have a lot leftover. 3) Rustic Italian Ciabatta

Pain de Campagne (Country Bread) cut in half Photography by Rick Holbrook; Food Styling by Kaitlin Wayne
One of our favorite sourdough loaves.

2) Pain de Campagne (Country Bread)

Not only does this recipe make an excellent sourdough loaf — crunchy, crackly, and with an open crumb — but it also uses discard starter in the dough. That means you can bake with starter straight from the fridge, as long as it’s healthy and has been fed within the past week. Long, flexible fermentation times mean this recipe can also fit seamlessly into your schedule, as Martin demonstrates.
